We got a call last week to clean a grease spill at a restaurant. But when we got there, we found that someone had tried to clean it with a hose and the greasy water had run down the alley for almost a block.

Sometimes they spill some grease while dumping into the container. It doesn’t take too many gallons of dirty grease to make a huge mess.
And if you try to wash it without a way to collect all the greasy water, it will run downhill until it runs into a storm drain, leaving a greasy trail all the way. And letting anything except rainwater run into the storm drain can get you a big fine. Penalties can start at $1000/day.
